Two main cheeses make our dishes the best in the business. That’s Grana Padano cheese and Grande Cheese. Both are considered industry standards for making a variety of Italian dishes including pizza. Here we highlight both:.
Imported from Italy, Grana Padano (GP) is in the parmesan family. It is possibly one of the few cheeses that can compete with the King of Cheeses; Parmigiano-Reggiano. GP was created by the Cistercian monks of Chiaravalle in the 12th Century it is still made throughout the Po River Valley in northeastern Italy.
The cheese is made from unpasteurized, semi-skimmed cow’s milk and aged for about two years. Grana Padano is manufactured in cylindrical wheels measuring 35 to 45 cm in diameter, and 15 to 18 cm in height. As Grana Padano ages, the flavors become pronounced, savory and complex and the texture becomes more crumbly.
Their heritage began more than a century ago in a village called Montelepre, Italy. Grande’s founder Filippo Candela was born there and learned the fine art of making Italian cheeses. Today, Grande is based in Fondu Lac, Wiconsin with several production facilities across Wisconsin.
